Ingredients

  • 2 cans (20 oz each) young green jackfruit in water, drained and rinsed
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup BBQ sauce
  • 1/4 cup vegetable broth
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 6 burger buns
  • Coleslaw or pickles for serving (optional)

Instructions

  1. Shred the drained and rinsed jackfruit with your hands or two forks, removing any tough cores or seeds.
  2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic to the skillet and cook for another minute, stirring frequently.
  4. Stir in the shredded jackfruit, BBQ sauce, vegetable broth, smoked paprika, cumin, black pepper, and salt. Mix well to combine.
  5. Cover the skillet and let the mixture simmer for 20-25 minutes, stirring occasionally, until the jackfruit is tender and has absorbed the flavors.
  6. Preheat your oven to 350°F (175°C). Place the burger buns on a baking sheet and warm them in the oven for 3-5 minutes.
  7. Assemble the sandwiches by placing a generous amount of BBQ pulled jackfruit on the bottom half of each bun. Top with coleslaw or pickles if desired, and cover with the top half of the bun.
  8. Serve immediately and enjoy!
