Ingredients

  • 2 large eggplants, sliced into 1/4-inch rounds
  • Salt
  • 3 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 1/2 cups all-purpose flour
  • 3 large eggs, beaten
  • 2 cups breadcrumbs
  • 1/2 cup chopped fresh basil
  • 1/4 cup olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sprinkle salt on both sides of the eggplant slices and let them sit for 30 minutes to draw out moisture. Rinse and pat dry.
  3. Set up a breading station with three shallow dishes: one for flour, one for beaten eggs, and one for breadcrumbs.
  4. Dredge each eggplant slice in flour, then dip in beaten eggs, and finally coat with breadcrumbs.
  5. Heat olive oil in a large skillet over medium heat. Fry breaded eggplant slices until golden brown on both sides, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
  6. Spread 1 cup of marinara sauce on the bottom of a 9x13-inch baking dish. Layer half of the fried eggplant slices over the sauce.
  7. Top eggplant layer with 1 cup of marinara sauce, 1 cup of mozzarella cheese, and 1/2 cup of Parmesan cheese.
  8. Repeat layers with remaining eggplant, sauce, and cheeses.
  9. Bake in preheated oven for 35-40 minutes, or until bubbly and cheese is melted and golden brown.
  10. Remove from oven and let rest for 10 minutes. Sprinkle with chopped fresh basil before serving.
