This Zesty Chicken Fajita Skillet recipe was inspired by my love for Mexican cuisine and the need for a quick, easy, and delicious weeknight meal. The combination of tender chicken, vibrant bell peppers, and onions cooked in a zesty spice blend creates a mouthwatering dish that's sure to please the whole family.

One of the best things about this recipe is its versatility. You can easily adjust the heat level by adding more or less chili powder, and you can even swap out the protein for steak or shrimp if you prefer. Serve it over rice, in tortillas, or on a bed of greens for a satisfying and healthy meal.

The secret to this dish's incredible flavor lies in the homemade fajita seasoning. By making your own blend, you can control the quality of the ingredients and customize the taste to suit your preferences. Plus, it's a great way to use up those spices sitting in your pantry!

  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper (optional)
  • Salt and pepper, to taste

  1. In a small bowl, combine chili powder, paprika, ground cumin, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper to create the fajita seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the sliced chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add the sliced bell peppers and onions. Cook until they are softened and slightly charred, about 5 minutes.
  5. Return the cooked chicken to the skillet and sprinkle the fajita seasoning over the chicken and vegetables. Stir well to evenly coat everything with the seasoning.
  6. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
  7. Serve immediately with your choice of sides.
