Ingredients
- 4 cups vegetable broth
- 2 cups heavy cream
- 1 lb potatoes, peeled and diced
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 lb mixed seafood (shrimp, scallops, clams)
- 1/2 cup corn kernels
- 1/4 cup all-purpose flour
- 4 tbsp unsalted butter
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add onions, carrots, and celery, and cook until softened, about 5 minutes.
- Add garlic and cook for an additional minute, stirring frequently.
- Stir in the flour and cook for 2 minutes, stirring constantly.
- Gradually add the vegetable broth, stirring continuously to avoid lumps. Bring to a boil.
- Add potatoes, thyme, and bay leaf. Reduce heat to low and simmer for 15 minutes, or until potatoes are tender.
- Stir in the mixed seafood and corn. Cook for an additional 5 minutes, or until seafood is cooked through.
- Remove the bay leaf and discard. Stir in the heavy cream and season with salt and pepper to taste. Heat gently until warmed through.
- Serve hot, garnished with fresh parsley.
