  • 4 cups vegetable broth
  • 2 cups heavy cream
  • 1 lb potatoes, peeled and diced
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lb mixed seafood (shrimp, scallops, clams)
  • 1/2 cup corn kernels
  • 1/4 cup all-purpose flour
  • 4 tbsp unsalted butter
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, for garnish


  1. In a large pot, melt the butter over medium heat. Add onions, carrots, and celery, and cook until softened, about 5 minutes.
  2. Add garlic and cook for an additional minute, stirring frequently.
  3. Stir in the flour and cook for 2 minutes, stirring constantly.
  4. Gradually add the vegetable broth, stirring continuously to avoid lumps. Bring to a boil.
  5. Add potatoes, thyme, and bay leaf. Reduce heat to low and simmer for 15 minutes, or until potatoes are tender.
  6. Stir in the mixed seafood and corn. Cook for an additional 5 minutes, or until seafood is cooked through.
  7. Remove the bay leaf and discard. Stir in the heavy cream and season with salt and pepper to taste. Heat gently until warmed through.
  8. Serve hot, garnished with fresh parsley.
