Roast beef has always been a classic dish enjoyed by many families during special gatherings. The aroma of the beef slowly roasting in the oven brings back memories of Sunday dinners at my grandmother's house. She would prepare this mouth-watering roast beef with love, and it never failed to impress everyone at the table.

Over the years, I've tweaked her recipe slightly to make it even more flavorful and tender. This version of the recipe has become a favorite among my friends and family, who often request it for holiday meals and celebrations.

The secret to this amazing roast beef lies in the combination of herbs and spices, as well as the slow-roasting technique that allows the flavors to meld together perfectly. Give this recipe a try, and you'll see why it's become such a beloved dish in our home.

  • 4 lb boneless beef roast (top round or chuck)
  • 2 tbsp olive oil
  • 1 tbsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp paprika
  • 1 cup beef broth

  1. Preheat your oven to 325°F (163°C).
  2. In a small bowl, mix together the salt, pepper, garlic powder, onion powder, thyme, rosemary, and paprika.
  3. Rub the beef roast with olive oil, then evenly coat it with the spice mixture.
  4. Place the seasoned roast on a rack in a roasting pan.
  5. Pour the beef broth into the bottom of the roasting pan.
  6. Cover the pan with aluminum foil and roast for 2 hours.
  7. Remove the foil and continue roasting for an additional 1 hour, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  8. Let the roast rest for 15 minutes before slicing and serving.
