Ingredients

  • 4 lb boneless beef roast (top round or chuck)
  • 2 tbsp olive oil
  • 1 tbsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp paprika
  • 1 cup beef broth

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a small bowl, mix together the salt, pepper, garlic powder, onion powder, thyme, rosemary, and paprika.
  3. Rub the beef roast with olive oil, then evenly coat it with the spice mixture.
  4. Place the seasoned roast on a rack in a roasting pan.
  5. Pour the beef broth into the bottom of the roasting pan.
  6. Cover the pan with aluminum foil and roast for 2 hours.
  7. Remove the foil and continue roasting for an additional 1 hour, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  8. Let the roast rest for 15 minutes before slicing and serving.
