Ingredients

  • 2 cups all-purpose flour
  • 1 large egg
  • 1 teaspoon salt
  • 1 pound russet potatoes

  • 1/4 cup fresh sage leaves
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Peel and cut the potatoes into equal-sized pieces. Boil them in a pot of salted water until fork-tender, then drain and let cool slightly.
  2. Mash the potatoes using a potato ricer or masher until smooth, then let them cool completely.
  3. In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix gently until a soft dough forms, being careful not to overwork the dough.
  4. Divide the dough into four equal portions. On a lightly floured surface, roll each portion into a long rope about 3/4-inch thick. Cut the ropes into 1-inch pieces to form the gnocchi.
  5. Bring a large pot of salted water to a boil. Cook the gnocchi in batches, removing them with a slotted spoon once they float to the surface. Transfer the cooked gnocchi to a plate.
  6. In a large skillet, melt the butter over medium heat. Continue cooking until the butter turns golden brown and smells nutty. Add the sage leaves and cook for 1-2 minutes until crisp.
  7. Add the cooked gnocchi to the skillet, tossing to coat in the brown butter sage sauce. Season with salt and pepper to taste.
  8. Serve the gnocchi hot, garnished with grated Parmesan cheese.
