Ingredients

  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup red wine
  • 28 oz can crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1 bay leaf
  • 1/2 cup whole milk
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and cook until softened, about 5-7 minutes.
  2. Add the garlic and cook for an additional minute.
  3. Add the ground beef and pork to the pot, breaking it up with a wooden spoon. Cook until browned, about 10 minutes.
  4. Stir in the red wine and let it reduce for 2-3 minutes.
  5. Add the crushed tomatoes, tomato paste, oregano, basil, salt, black pepper, red pepper flakes, and bay leaf. Stir well to combine.
  6. Bring the sauce to a boil, then reduce the heat to low and let it simmer, uncovered, for 45 minutes, stirring occasionally.
  7. After 45 minutes, stir in the milk and continue to simmer for another 15 minutes.
  8. Remove the bay leaf and discard. Stir in the grated Parmesan cheese.
  9. Serve the Bolognese sauce over cooked pasta of your choice, and garnish with additional Parmesan cheese and fresh basil if desired.
