Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup vegetable oil
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/4 cup chopped fresh basil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place chicken breasts between two sheets of plastic wrap and pound to an even thickness using a meat mallet or rolling pin.
  3. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, Parmesan cheese, salt, and pepper.
  4. Dredge each chicken breast in flour, shaking off excess, then dip in egg, and finally coat with breadcrumb mixture, pressing firmly to adhere.
  5. Heat vegetable oil in a large skillet over medium heat. Cook chicken breasts until golden brown on both sides, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain.
  6. Spread 1 cup of marinara sauce in the bottom of a baking dish. Place chicken breasts on top of sauce, then spoon remaining sauce over chicken.
  7. Sprinkle mozzarella cheese evenly over chicken breasts.
  8. Bake in preheated oven for 20-25 minutes, or until chicken is cooked through and cheese is melted and bubbly.
